Meatless Lunch Recipe

I know meatless January was a big trend in efforts of trying to get people to add more vegetables to their diet.  I personally am I vegetarian, I eat fish once a week, I eat cheese  (hate milk-don’t like the taste) a few times a month, and I eat eggs whenever I eat a cookie or cake.  The rest of the time my diet is actually plant based.  I chose to change my diet 5 years ago for moral reasons, not because one diet is healthier than the other because I believe a well balanced meat eater (aka one who eats their veggies and doesn’t consume processed meats at every meal) can be just as healthy as a well balanced vegan.

However because I am all about helping people add vegetables to their diet (believe it or not I hate veggies and I eat them because they’re good for me), I wanted to share this quick lunch recipe:

  • trader joe’s wild rice medley
  • peas
  • tomatoes
  • garlic
  • cilantro
  • oregano
  • celery salt
  • red bell pepper

I don’t track anything, so I can’t tell you the exact portions I used, but if you track your food you can definitely re-create this to your own portions

  1. boil rice, cilantro, and garlic- cook until ready
  2. in a separate pan add tomatoes, peas, and red bell peppers.  Saute with oregano and celery salt
  3. mix veggies into rice once the rice is ready
  4. serve & enjoy!

  1. Celery:  A stalk of celery is roughly 3 calories.  It’s calorie coming from .5g of carbohydrates.  The great part about celery is that despite being low calorie it is a great source of natural sodium, potassium, calcium, and vitamin C!
  2. Spinach:  1 cup of spinach is only about 7 calories and has more nutrients that lettuce! The calories in 1 cup of spinach come from about 1.1g of carbohydrates, .9g of protein, and .1g of fat.  Spinach is another great source of sodium, potassium, Vitamin A, Vitamin C, Calcium, and Iron
  3. Kiwi: 2 Kiwis are about 100 calories coming from 24g of carbohydrates (natural sugars and fibers), 1 g of fat, and 2 gram of protein.  Sprinkle some seeds on those slices and you have a refreshing snack!  Anyways, kiwis are a great source of protein, vitamin A, vitamin C, Calcium, and Iron
  4. Green Bell Peppers: 1 cup of green bell peppers has 18 calories from about 4.3 grams of carbs, .2g fat, and 1 gram of protein.  It is loaded with potassium, vitamin A, more Vitamin C than your average orange, and has some sodium.
  5. Mushrooms: 1 cup of mushrooms has about 44 calories coming from 6.6 grams of carbs, .6 grams of fat, and 6.2 grams of protein! Mushrooms are a great source of Calcium, Iron, potassium, and sodium.

Vegan Lettuce Wraps

With the what the health phenomena I have been getting so many more inquiries about people wanting to become vegetarian or vegans so today I wanted to share a quick and easy, animal cruelty free dinner recipe!

Vegan Lettuce Wraps:

  1. Romaine Lettuce = Taco Shell Replacement, Butter Lettuce is a great substitute as well!
  2. In a pot saute mushroom, onion, tomatoes and season (I use cumin, cayeene, and celery salt)
  3. Add in Beans on your choice and mix together
  4. sprint hemp seeds to taste (I added 1 tbsp to the mix for 2 people)
  5. Slice up some fresh avocado on top
  6. Enjoy!
